Duck rillettes are made from pieces of duck tenderloin and breast, slowly cooked in their own fat until tender and melt-in-the-mouth. Delicious served on fresh rustic bread or spread on toast as part of an aperitif.
Ingredients: Duck lean meat and fat (French origin), carrots, salt, pepper, Basque Country chilli pepper.
